it's the only way to go to ensure ultimate quality, with Nikon I use Capture NX to process, with Canon, one of the nicer one these days actually is Adobe Lightroom, which is pretty good for RAW workflow.

With 5D size of approx 12mb, you can shoot 1,300 images, I guess 16gb is enough, unless you shoot a lot in rapid session.

So if you are not shooting raw, you are missing out big time, if memory is a concern, take a laptop with you to upload some after each day.
