樱 桃 蛋 糕 卷



材料: 蛋白(Egg white): 2个 蛋黄(Egg yolk): 4个 低筋面粉(low-gluten flour): 40克 粟米油(Corn oil): 30克 (温热) 发粉(Baking powder): ½茶匙 糖(Sugar): 40克 果仁樱桃碎(Mixed nuts /cherry): 40克 香精(vanilla): 一茶匙 果酱加打发鲜奶油(Fresh cream with fruit jam): 100克 烤盘: 长方形(12"×15") 做法: 1.低筋粉,发粉过筛备用.烤盘内涂一层油,放入烘焙纸,再在纸上面涂上一层黄油(或白油),把樱桃碎撒在上面. 2.蛋白加糖打发至刚刚硬性发泡,再倒入蛋黄打1分钟至均匀. 3.加入筛好的面粉搅拌均匀,再加入粟米油和香精拌匀,倒入烘盘,用手抹平. 4.装面糊的烤盘放在一个装了热水的大烤盘当中.放入烤箱200º C烤9分钟取出.待凉. 5.趁热撕去蛋糕纸,再重新盖上.凉后,涂上鲜奶油及果酱,卷起. 6.蛋糕卷用纸包住,一手用方纸板抵住蛋糕,一手拉紧底下的纸.这样蛋糕卷便会更紧实. 重点提示: 1.打蛋白的时候,如果打得太硬,烤出来的蛋糕便会比较粗.所以,注意不要打过头. 2.在把面粉拌入蛋糊的时候,最好用手搅拌,这样会非常的均匀,不会出现颗粒现象. 3.装面糊的烤盘放在装热水的烤盘上,以下面蒸,上面烤的方式烘焙出来,蛋糕会非常的柔软. 4.如果烤出来的蛋糕太厚,那么卷的时候,便可能出现断裂现象.所以,烤盘大小一定要合适.
