Gandhi was brought up in Hinduism and Jainism where the concept of "ahimsa" is deep-rooted.
That could explain his vegetarianism.
Gandhi was very keen on nutrition and diet. He wrote at least one book on them.
His autobiography reads like a dietician's exploration ;-)
He wrote also about the inferior nutrition value of white rice (in contrast to brown rice).
But many Indian restaurants don't have the option of brown rice, at least where I live.
So Gandhi's influence on Indians might not be as big as I'd like to believe.
