Proscutor may possibly provide evidence of daily recipts and finacial book of day, week and month. By the difference, proscutor may calculate how much the owner lost. But it is still indirect proof since the owner may hire other workers.

By the way, where are the owner come from? If they are not local people, most likely the owner would not report exactly income. Even he is the local people he still possibly escapes tax. Can you find a way to see how much he report tax? If so you may win in some extence or get a deal with him. The deal means that you just pay for what you take and he withdraw the case.

In your case, it is very difficult to prove that you saved YOUR money into bank since you do not have proof. And since you did not report the custom the cash, they think you lied and you lost credity in their mind and they won't trust you.

And more, since you have some money in bank they do not think you are poor. If you do not show them your bank account you can not prove them you badly need money. 10k is a lot money even for a local UK people.
Now you have three options:

1. hire a lawyer and spend some of money,
2. use a free layer and you may lose a lot from money to your reputation.
3. just go back China and you risk an arrest at airport and face more serious charge.

Think about it, money is important but not the most important in your life. You have a long way to go and a lot optunities to make a lot money.
