Only videotape the most important part, when the teacher give a summary at the end of the class and give assignment for preview spots.
If she doesnt give a summary, you should ask for it. It takes five minutes to summarize all the practice you need, reviews and previews.
For very young students it doesnt require sight reading, only memorize the notes. Like my daughter, she's only three, sight reading is impossible.

In Japan, they let beginners attend more advanced students' private lessons to get motivation. And every child's mother has to learn to play a piece before they start on teaching the child. They set actual stage for the kids to 'perform' everyweek to their dads at home, even before they can perform anything. Just hold the violin and bow to parents on a cardboard box. Parents applaud, kids get motivated. Amazingly thoughtful for young beginners. Teachers always say' Very good, can you do better?'
Suzuki was very successful on teaching very young kids because he loved them very much. But it wasnt very appealing to high school students. Lots of them dropped practice in order to get to college. So the goal of Suzuki method is not to train professional musicians. It is to enhance children' s early development. Remember that, you won't feel too much burdened by expectations.
