淄博名菜--糟溜鱼片
备料: 龙利鱼批斜刀片, 水发黑木耳, 姜丝, 盐, 白糖, 生粉, 糟卤.
做法: 鱼片用料酒, 盐和生粉浆好(半天左右), 把鱼片用冷油拌一下. 另起油锅, 待油温达到中等热度时, 把鱼片一片一片分开放入热油中拉熟, 盛出沥油备用. 锅里留少许油, 烧热后放入姜丝爆香, 再放入黑木耳煸炒至熟, 再放入备用的鱼片, 倒入半瓶糟卤, 放白糖. 再用水淀粉勾芡即可装盘.
