You should sue her by hiring a good chinese lawer. Good Chinese lawer only cost $1000 per case. You can win the case I think.
Another example i KNOW is from a friend of mine, very similar case as you. He knows a chinese newspaper editor, and he told her that if she does not return the money, he will write an article about her. And her parents want to save face and help him in court to win the case. And he won the case, got money back from her.
