I dont think that is good idea.
Labor department has regulation on age and dangerous equipments. In restaurant kids under 18 can not access the heat source, like stove and deep fryer.
Depend on what he would like to use. Most equipments can not be operate under 16 years old. He can sweep the floor and that is about all.
