The issue hinges on whether the hotel is responsible for any property loss occured within the hotel. It seems they've already disclaimed it. Unless the disclaimer is in conflict with local laws, you are most likely out of luch against the hotel. There are exceptions though, such as the thief has history and the hotel knew about it. But you may want to consult a local attorney with respect to that path.
