Depending on your visa status.
(1) If you are on J1, you do not have to pay tax in the first three years.
(2) If you are on H1, you need to pay tax. Don't worry, the payroll official will ask you to fill some forms which will decide how much your income needs to be withheld.
(3) Based on the PRC-USA government treaty (Article -20 ?), each year Chinese students and scholars's first $5,000.00 income is free of tax. This is valid in their first five years. In order to get that benefit, you need to fill a form at the payroll office each year or at the time when you fill the payroll documents at your arrival.
(4) Usually the withhold part of your income is not exactly the same as your duty of tax. The accurate tax will be decided at the time when you file your tax forms (before April 15 of the next year).
(5) Talk to some Chinese students or scholars arround you after you come. They will tell you more details.
