You will have to create testamentary trust through will or execute a living trust while you are still alive. Your spouse can be the trustee if he is trustworthy. To make sure that your kids will get most of the money that he/she deserves, you probably need an experienced estate planning lawyer to help you. Just don't expect it to DIY. It will be just an invitation to litigation. Be noted that in most of the states by statute you cannot entirely disinherit your spouse, meaning that you cannot leave everything to your kids.
