If you are U.S. Citizen, you just ask custom officer not to stamp on your passport, that is it. But if you are Chinese citizen, you need a visa to get in Israel, which means your passport is already stamped with Israel visa. There is nothing you can do about that part. Some arab countries are Israel friendly, some are not. If you have Israel stamp, for some country, that is automatic rejection. I don't think Egypt and Jordan will cause you any problem. By the way, I went to Israel last year, it is much safer than people thought. I flied to Jordan first and then entered Israel by land.
