Possibility of Job Change

My current situation:

I140 approved. Waiting for Priority Date to file I485. 6 years H1B will be expired in June 2009 and my company is in the process doing 3-year H1B extension for me (can do that because I140 approval).

My question is:

If I have a better opportunity now, can I change job? How is it going to affect my GC application process. Can I just transfer my PERM and I140 (like H1B) to the new company so that my new employer can continue filling 3-year extension for me? Or, am I pretty much stuck with my current employer.

Not having much knowledge on the GC stuff. Please help out....
