System Preferences => International
Languages tab => Add 简体中文 or 繁体中文
Input tab => Check 简体中文 or 繁体中文
(I'm using OS X 10.2, but yours should be similar)
Now every app will have the input menu on the top menu bar, use Apple-Spacebar to switch between input languages.
