You can do it in other shops, as long as you keep the record and receipt. When you claim the warranty, the dealer normally will not even ask for it (as you have bring businss to them, paid by Toyota). All 4 claims I have had, I never was asked for the maintenance...

Again, ask for the platinum, it is 0 deductible.
