二十多年来每年感恩节我都烤火鸡, 现在分享一下我的经验。
这个方法基本上来自 America's Test Kitchen, 再按照我自己的 Taste 做些改变.
(1) 泡盐水 (Brine the turkey): 在烤的前天晚上,把火鸡泡在冰冷盐水里, 让它泡一个晚上. 这一步非常重要, 很多人烤出来的火鸡肉又干又不入味,就是没有做这一步.
盐的分量: 2 teaspoons per pound of turkey (盐先用开水溶化);
水的分量: Enough to cover the turkey in the pot/bucket.
(2) 洗澡: 在烤的那天早上,拿掉火鸡腔里的内脏和脖子,把鸡清洗干净。然后用热滚滚的开水为火鸡里里外外洗个淋浴. 这个步骤有两个目的: (a) 防止鸡胸太冰烤不熟; (b)烫过热水的火鸡变得很“干身”, 方便腌.
(3) 腌 (Dress the turkey).
Ingredients: One and a half teaspoons of salt per pound of turkey; fresh ground pepper (to you taste); 两tablespoons of 豆瓣酱; 两tablespoons of 海鲜酱 (没有也没关系).
Mix the above ingredients and then dress the turkey in and out. 鸡胸里外放多点酱.
把火鸡的两腿用 cooking twine 绑起来 (cooking twine 要先泡水, 否则会被烧断)。
(4) 上烤盘:
烤盘底上铺一层 Celery stalks (对半切段).
把火鸡放在芹菜上面, 鸡胸朝下. (如果鸡胸朝上,鸡胸肉会很干, 而且烤熟的火鸡卖相不好).
让腌好的火鸡在烤盘休息三四个小时左右.
(5) 烤:
Set the oven to Convection Roast at 325F.
Once the oven reaches 325F, put the turkey inside the oven.
30 minutes after the turkey has been roasted in the oven, add 6 cups of boiling water to roasting pan and continue to roast. This is to keep the turkey moist.
Then, for every 30 minutes, take the turkey out of the oven and scoop some liquid from the bottom of the roasting pan and pour it over the turkey.
When putting the turkey back into the oven, reverse the orientation of the turkey to keep it evenly roasted.
(6) 翻身:
Approximately one hour before the turkey is done, 把火鸡翻过身来 , 让鸡胸朝上. 继续烤.
这个步骤最难. 小心烫伤。我一般会把火鸡移到一个大铝盘上, 让它翻过身来, 再放回烤盘继续烤.
太早翻身, 鸡胸不熟, 而且鸡胸肉质干;太晚翻身,鸡胸的颜色不好看.
(7) 如何知道火鸡是否已经烤熟?
首先对火鸡需烤多久要有个概念.
用我这个方法, 一磅火鸡大约需要烤9分钟。
比如今年我买的火鸡刚好20磅,所以需要180分钟 (刚好3小时).
烤了两个小时后, 我把火鸡翻身, 让鸡胸朝上. 继续烤。
20 minutes before the turkey is supposed to be done,use a roasting thermometer to check the center of the breasts。
Once it reaches 165F. It is done. Take the bird out of the oven.
Otherwise continue to roast.
(8) After the turkey is taken out of the oven, remove it from the roasting pan.
Let it rest for 45 minutes before curving it.
If the turkey is curved while hot, juice will leak out and the meat will become dry.
(9) After skimming the fat off the the turkey broth (火鸡汁), heat up the broth slightly,
然后把少量的火鸡汁淋在切好的火鸡肉上.
