Squeeze the frozen spinich, use two big red onions, it will taste very good
Spinach Balls

Ingredients:
40 oz of frozen chopped spinach, thawed and drained (squeeze in towel)
4 cups Pepperidge Farm herb stuffing mix (or other stuffing mix ,or bread crumbs. If cubed, crush in baggie before adding)
2 large onions diced (original recipe, 1 usually use 1)
8 eggs
1 cup Parmesan cheese, grated
1 ½ cups butter (or margarine) melted
1 tsp thyme
Garlic (powder or salt, if salt, use less reg salt to season) to taste
salt and pepper to taste
Directions:
Mix ingredients, (I usually mix everything but spinach together, then add spinach and mix with my hands)
Chill 2 hours or overnight
Roll into 1 inch balls (you can freeze here if desired)
Bake 30 min at 300o.
Once they cool down you can freeze here as well. They can also be stored in the refrigerator for a few days and reheated.
