There are two kinds of smoked

One is fast cooked, taking less than 2 hours to be done.
The other one is slow cooked, taking 8 hours to be done. The slow cooked one is considered more delicious and being sold several times as much expensive as the fast cooked one.

Be patient, the slow cooked salmon is just half done.
