胖胖坊:仿天津大麻花+交作业开口笑

一直想学做天津大麻花, 可找不到合适的方子.昨天看了熊猫媳妇帖子里面肉丸子做的小爱家的甜点-开口笑,突然有了灵感.于是我结合麻花和开口笑做法,山寨成了天津大麻花,很酥脆.纯属山寨,还请大家手下留情轻拍, 轻砸.







这个是给小爱交作业的开口笑

 


大麻花主要是参考了从前有个山 (http://bbs.wenxuecity.com/local-snacks/899854.html)和*小星星* (http://bbs.wenxuecity.com/cooking/1005077.html)

材料：
a.麻花面:高筋面粉 1.5cup ；糖1/8 cup ； 油 50ml ； 大鸡蛋半个, 水 75ml ； 小苏打baking soda 1/2tsp 。
b.酥面:低筋面粉 225g ,色拉油 10g, 糖75g,水50g ,泡打粉 4.5g ,小苏打baking soda 0.5g,大鸡蛋 半个,
c.其他:芝麻1/4 cup ,粹核桃仁1/4 cup ,almond aroma ,15ml

 
做法:
1.麻花面:先把料a液体混合，固体混合，然后把固体材料加到液体里面，揉成面团,(不同的面吃水不同，面硬度和一般的饺子面一样, 揉面时看情况添加面和水)醒一个小时待面发启.
2.酥面:把料b液体混合，固体混合，然后把固体材料加到液体里面，揉成面团，
3.醒面的时间,芝麻1/4 cup ，用开水烫好，保持不湿、不干的程度，准备搓麻条用。
4.麻花面团分为16小块如图1,然后取1小块搓成长约60厘米的条如图2,一共搓10条,然后从中间剪断成长约30厘米的短条,共20条光条如图3.
5.剩下的6小块,滚上芝麻,然后搓成长约60厘米的条如图5,一共搓6条,从中间剪断成长约30厘米的短条,共搓12条麻条如图5
6酥面与核桃仁粹1/4 cup ,almond aroma ,15ml,( 应该放桂花干,我没有)混合取4小块酥面成长约30厘米的条,共搓4条酥条如图6
7.按光条、麻条、酥条5∶3∶1匹配，搓成绳状的麻花(捏好咀)如图7,8,9,10.
8. 剩下的酥面分成小块，揉匀,滚上芝麻，制成开口笑.如图11.
9.锅上火放油 烧至6,7成热时 中火,将麻花放入油锅炸至沸起后翻个身，炸至深金黄色出锅沥油。
炸20分钟左右.开口笑下120c 的油锅炸6-8分钟或者到表面金黄就可以啦
