Is it approximately --

1/3 food cost;

1/3 labor cost;

33% gross profit:

6-8% goes to rent, tax, insurance and maitenance (6K/month rent, 1K/month RE tax, 1K others)

5-6% garbage, utilities, professional services

10% (?) franchise fee

9% owner profit (1.2M * 0.09 = 108K)
