鱼洗干净,撒上盐,过夜。烧之前,用水冲洗一下,以去除多余的盐。锅里加
油,烧热,将鱼两面煎黄,放一边。将切细的葱,蒜头,辣椒放入锅里的剩油中,加少量盐,翻炒到出香味。加少量水,将煎好的鱼放入,与葱,蒜头,辣椒一起煮,中间翻动几次,以便鱼肉入味。水干即成。
