probably need to "trick" the lense on your waterfall pic

see if you can get it focus on some spot darker than the waterfall, so the light sensor is set at the darker environment, then take your picture.

I dont know if it would work on camera, but we often do this trick (and the opposite side) with video camera using automatic settings.
