It really depends on your status and visa type.
For F-1, you do not need a valid visa but do need signed I-20.
For H-1, you can only go to Canada and Mexico.
If you are in the process of I140/I485, you probably need AP.
You have to call the cruise liner and ask them about the policy. Some won't let you get onboard without a valid visa entry. Some might call your school/employer and the USCIS to verify your info/status. And you better bring the print-out of the articles from USCIS or CBP(custom and border protection) regarding the visa revalidation rules.
Once they let you board, they will take your passport and there typically won't be immigration clearance at the ports of call on those islands. You can use your US driver license as ID.
