The ferry ride from Orcas to Anacortes very scenic

You will see Mt Baker from water. I would time it to see sunset over Baker.

If you squeeze your schedule tighter, you might be able to make a stop on Lopez island. But for one day, that's a little bit of a stretch. It is summer with long day light hours, though.
