For Crater lake, you can take I-5 down to Roseburg. Or you can drive through Mount Hood, have lunch at Timberline Lodge (from the movie Shining), and take Highway 97 down the Oregon High Desert. It's slower but you can see some old volcanic scenary along the way.

Olympic NP is worth another visit in the Summer. In addition I would enjoy the Cascade Loop: highway 2 to Leavenworth(you can find 猪肘子 there), Lake Chelan, The Western-theme town of Winthorp, Northern Cascade NP, and then back on I-5 on your merry way to Vancouver. Throw in a detour to Dry Falls and Coulee Dam.
