If your budget is $2000 total for 2 persons, your choices would probably be limited to mainland U.S. or a Caribbean cruise out from NYC (inside cabin).
May not be enough for Hawaii, or Central / South America.
NYC to Hawaii, airticket alone would cost you $600 to $700 a person. Hawaii hotel would run $100 to $150 a night on the low end, unless you have ways to rent private homes for few hundreds a week like someone posted on this board several days ago.
Central / South America airtickets are not cheap either. However once you get there, lodging and meals are cheap.
On the other hand, you may consider a cruise out from NYC, so you dont have to fly. Sometimes you can find inside cabin for $700+ 7 day Caribbean cruise that visit 3 to 4 ports. ($ is Cruise, port charges and taxes inclusive) (Cruise includes your room and board, the extras would be about $10 per day per person tips, and your personal incidentals, such as drinks, shore excursions, casino plays, etc.) That may be your best value for money.
You can look up packages / cruises on Travelocity site to get an idea.
Above suggetions are strictly based on budgets, without any consideration of what you would like to see, what kind of traveling you want to do.
