酸辣汤,开胃解馋。 自己在家做只要把握好调味料放的次序和量,很容易就做出大厨水平。 还有餐前的炸面干,嘎吱嘎吱的要蘸着Duck Sauce 一起吃才过瘾。
酸辣汤中配料因个人口味喜好不同, 有加肉丝的, 有纯素的, 我的版本是纯素的, 汤里放的醋用的是保宁醋, 也可选择不同品牌的醋。
配料:
1/4 of Firm Tofu
1 Shiitake Mushroom
5 Black Fungus
1 Small Bamboo Shoot
1 Egg
Minced Coriander
Minced Scallion & Ginger
3 1/2 Cup of Hot Water for soup base
酸辣汤调味料:
1/2 Teaspoons Salt
4 Tablespoons Low Sodium Soy Sauce
1 Teaspoon White Pepper Powder
1/8 Teaspoons Sichuan Pepper Powder
2 Tablespoons Corn Starch with 3 Tablespoons water mixed
4 Teaspoons Vinegar
1 Pinch of Mushroom Essence for taste (optional)
1 1/2 Teaspoons Sesame Oil
Duck Sauce:
1 Tablespoon Orange Jam ( 用梅子酱代替也可以)
1 Teaspoon Rice Vinegar
1 Teaspoon Sugar
1/4 Teaspoon Low Sodium Soy Sauce
1 Pinch of Ginger Powder
