上好五花肉，沸水焯去污物，切麻将块大小，如冷水锅内，切记水需没过肉块，大火烧滚，撇去浮沫，入料酒，煮至八成熟，入酱油，再滚后，放入白糖（其实红糖白糖冰糖皆可，看个人材料方便），改小火慢慢熬制，此时需注意翻动，防止粘锅，至汤汁粘稠即可，至此简单至极的红烧肉便告完成。
