I used to cook weekly one cup of dried cannellini beans from scratch by first
soaking them overnight and simmering them for hours for my Italian dish saucici
e fagioli, sausage with beans. They tasted nutty and smooth and won hands down
in nutrition over fares made from wheat flour, a staple where I came from.
Recently, I've been enjoying currying lentils, a pulse high in protein and fiber
and even cheaper than beans.
Legumes have become part of my diet and come a long way to keep me healthy. The
market can price them (maybe temporarily until the next hype) at rock-bottom but
I wouldn't lowball their value.
