Eggplants and a few home-made dishes

Eggplant is one of the vegetables that I have never gotten tired of eating since I was a child. Eggplant is delicious no matter how you cook it. Everyone in our family loves eggplants, so the farmer of our family  grow eggplants with extra care, but they don't produce many of them. Later, a new varity of 杭茄  was planted. It has a high yield. This is the first harvest of eggplants this year.

(1)beef casserole with basil, beans and eggplants

Since it's the first harvest, let's make a grand dish. Cut a piece of beef into small pieces, add a little salt, pepper, sweet potato starch and  let it sit for a while. Then stir-fry until there is no raw meat color。Take it out and put in a container.

Break the beans into about one-inch segments, and cut the eggplant into chunk. Spinkle a little bit of oil on speaded beans and eggplant  and  cook them separately in the air fryer.


Brush the casserole with a layer of oil.  Pick up a few leaves of  "Sage" from the yard, wash and arrange  them to the bottom of the casserole.  On one hand, this can preventting the pan from sticking. On the other hand , it will add some  fragrance of Sage to the dish. Then put the beans and eggplant in the casserole. 
Put some oil in the same pan cooing beaf and add some 郫县 bean paste and chopped garlic in turn. Then add water and sautéed beef to a boil, add some sugar and pour into the top of the eggplants in the casserole . After simmering for a while, turn off the heat and add the basil and stir.

 

(2)smashed Chinese cucumber salad with salt, garlic ,viniger. and sesame oil

 

(3)Stir-fried sweet potato sticks with green chili peppers,   Salad with sweet potato leaves.  Peel the sweet potato sticks, cut into segments, and stir-fry with chili peppers. Blanch the leaves and make salad with garlic , sesame oil.

(4)Overn-baked fish with salt , pepper, perilla frutescens and lemon juice.
