You can watch both sunset and sunrise in Key West and I wouldn't miss the sunset cellebration at Mallory Square. I personally don't recommend stay along Hwy 1; I would stay in Key West, which has more to do at night. The other keys - Key Largo, Islamorada, and Marathon all have resorts and inns. Look on the internet under these cities. There is a really nice Westin Resort in Key Largo. Key West has plenty of lodging options. Christmas is their peak time; so be sure to book ahead of time.
