This is a gray area: if you are on H1b and you also apply for EAD, then when you use EAD to work, there are two consequences: one is you have to renew EAD on a yearly basis and two is that your EAD *MIGHT* cancel your H1b status. The second one is not really clear: Immigration has not provided clear explanation regarding this. The safe route is to take your H1b and not apply for EAD if you don't have a compelling reason to do so.

You don't have to worry about your I485 application. Just go with your H1b and apply for an H1b entry visa in China. It is pretty sure bet that you will get the visa to come back.
