I-140 has your name, marriage certificate has your name and hers. So she can file I-485. Every I-485 is separate, no two persons can use only one I-485. If her I-485 approved before the divorce is final, that approval will be a legitimate approval. If divorced before her I-485 approval, that later approval can be ruled as a mistake if you tell USCIS.
