You can't work after the date on your EAC (or OPT).
Well, if you don't want to stay in USA, you can work a little longer, then, just leave! Who cares?
But if you want to apply for green card etc. you have to be careful!
You can work without pay. Talk with your employer to double pay you after you get H-1.
