I actually have seen US Customs officers waiting at the boarding gate to search ramdonly selected people. Mostly Indians. I have seen 2 Indians were found to carry stash of cash.

Why not use check? You can write your regular personal check in China to any China bank. It gives you a better exchange rate. If you exchange cash in China bank, it is 8.21. If you use check, it is 8.27. Of course takes a while for check fund to be available but I am sure you can work it out with family in China.
