In reality, you don't that much choices.
You have to marry before you get I-485 approval. Otherwise you wife will fall in anyother immigration category in which she is not allowed to come to US as a spouse of a green card holder, no matter she is a Canadian PR or not. She might come with her own non-immigration visa, say, H1, F1, L1 etc and is able to keep this status legally until her green card gets approval, but it will be hard for her to get such visa because of obvious immigration tendency.
In brief, if you marry after you get US green card, you have to separate for at least 5 to 6 years in different countries.
