help for 485 interview

I 140(NIW) was approved last year. Just got I 485 was transfered to local office for interview. I am doing research in a university. My offer is to next July, and I am looking for another job, still in this university, the same field. I am really anxious. Whoever can tell me:
1. Usually, what additional information do they need?
2. My current offer will end soon. If I am interviewed before I get new job, I can not provide long term employment offer to immigration office, what should I do?

Any information is deeply appreciated,please help!!!
