But if they leave with the AP, and then the "interview for I-485" is scheduled after they leave, they have to come back for that?

-Yes, but normally they may not be interviewed in these days.

that is also too much trouble?

-No trouble, and just come back for the interview (if any). They also can re-schedule the interview if they can not come back in time.
