Or when they make decision it does not matter whether I change the job before 180 days, as long as I have a job it will be fine.

Or it is just depends on officer's judgement.
-They will not make a decision to approve I-485 unless your priority date is current, but they will process your I-485 and thus, it is possible they will send you RFE for your employment status any time.
