If you change your employer with the I-485 pending < 180 days, there are two risky things: 1. if the old employer withdraw your I-140 before your I-485 pending reaches 180 days, your I-485 will be denied; 2. if USCIS make a decision on your I-485 approval before your I-485 pending reaches 180 days, the I-485 may also be denied.
