You should list all your family members in application, but you can choose every one will accompany you to Canada or not. But I think VO will doubt the purpose of your application because you leave your kid alone.

I feel you think too much. The easiest way I think is that apply with your baby, PR doesn't affect his nationality. If you get citizenship after 3 three years residency in Canada, you kid will also get Canadian citizenship. He will have dual-citizenship. Why you want to leave him to the future?
