-Yes as long as your EB2 priority date bcomes current before his/her CSPA age reaches 21 years old. Your child CSPA age = your child age when your EB2 priority date becomes current - your I-140 pending dates, so the longer your I-140 pending, the more benefit for your child not to be age-out.
