-You do not have a problem to enter US by just presenting the conditional green card and the extension letter, but I am not 100% sure whether the Chinese Customs officer allow you to get out of China or board the airplane. So, for the safest, I still suggest you to get the green card stamp on your passport.
You may just show the I-751 filing receipt, green card and your passport the IO for the green card stamp (not show the extension letter).
