My daughter has a similar situation with yours. She applied 485 but was denied since lacking visa number. She changed to F1 sucessfully inside US with this immigration intension.So you may try it too.

Key point is she needs to get all documents from her school remotely. If you can help, that will be greate!

In her application, she needs to show her 485 receipt and states that she is waiting for a visa number. If she has a statement of what she wants to be (contributions to US socialty or interests), it will help.
