1. 我妻子于今年3月23日因其父亲病故母亲病重回国, 我是在之后的3月24日寄出她的AP回美证I-131Form.

 -She should have gone to USCIS local office to apply for the emergency AP in this case.

如果如实告之, 说明紧急回国的理由, 移民局是否能出于人道主义通融我妻子, 而批准AP? 

-It is too late.

2. 如果不主动如实告之她已回国, 而补充齐所需材料, 但略去这次她回国的信息, 是否有可能蒙过去, 后果是什么?

-The CBP at the port of entry may find it and thus, do not allow your wife to enter US when she comes back.

By the way, what I said here is just based on my knowledge on the immigration law, and I really can not predict what will happen beyond that.

 

Another choice is that just ignore the RFE and thus, USCIS will deny the AP application. Your wife can apply for the H4 visa to come back if applicable; or just wait for the green card approvaln and send the green card to her to come back.
