Based on recent priority date (PD), F2A only needs about 7 months for the PD to be current to file the I-485 (not five years as before)and about one year get the the green card. So, your spouse just keep her F1 for several months and then files the I-485. After filing I-485, her status is safe and can use AP to travel to China.
