Can I transfer and extend my H-1 status beyong 6 years using the approved 140 sponsored by my previous employer?
-Yes as long as your I-140 is not withdrawn bu your previous employer yet.

Will this spark any problem to my pending I-485, because I may NOT want to file AC-21.
-Not at all.
