-Yes, you can do any job if you use EAD. But you need to find a full time job in the same/similar area as that indicated in your I-140. This is the requirement of AC21. Of course, if USCIS does not send you RFE for your employment status, your I-485 is safe. But you need to prepare for it by finding a new job as required by AC21.
