A I said, the I-485 is yours, not related to any employer even if you filed the I-485 when you were working for a certain emplyer. So, nobody can cancel your I-485 except yourself. But the employer who sponsored your I-140 can cancel the approved I-140. Because your I-485 has been pending for more than 180 days, your I-485 will not affected even if the employer cancel the approved I-140. So, you do not need to worry about that.
