If your EB-1b I-140 is approved, your I-485 will be approved soon, definitely less than 3 years, so you do not need EAD; however on the other hand, with EAD (your wife and your kid), you can work more than one company, and your wife can find any job she likes, and your kid can get a SSN - that means you have more flexibility.

After all, it is up to you.
